Red Lentil, Beetroot, Vegetable & Ginger Dahl
Cooking Time: 30 minutes
1 Medium Beetroot, chopped in medium chunks
1 Cup Red Lentils, rinsed
4 Mushrooms, chopped into quarters
1 White onion, sliced
Root ginger 1 inch chunk, chop in tiny chunks
Small head broccoli, roughly chopped up
1 tbsp nutritional yeast
2 dried bay leaves
1 tsp mixed dried herbs
1 tsp paprika
Cracked black pepper
grey sea salt or pink salt
750 ml – 1 litre clean water
Place water, red Lentils, beetroot, ginger, onion and all seasoning and bring to the boil, then simmer for 15-20 minutes, then add the remaining ingredients broccoli, mushroom and simmer for 5-10 minutes more, when off heat stir in the nutritional yeast and serve.
